Margarita Cupcakes

Today I made some Margarita cupcakes. This is a very simple recipe and you probably have most of the items that you need already in your cupboard and refrigerator.


You will need:

1 box of white cake mix
3 egg whites
1 cup of Margarita mix
1/4 cup tequila
3 tablespoons of vegetable oil
2 tablespoons of grated lime zest
2 cans of vanilla frosting
lime slices
green sugar
6 green and white straws (each cut into four pieces)

Preheat the oven to 350 degrees and line two muffin tins with plain white liners. Combine the cake mix, egg whites, Margarita mix, tequila, vegetable oil and lime zest.  Mix throughly. Evenly spoon the mix into each of the 24 liners. Bake for 18 - 20 minutes.


Once the cupcakes are cooled you can frost them with vanilla frosting and roll the edges in green sugar.


Then add a thin slice of lime on top of the cupcake.


And add the little piece of straw.


Before the batter baked I could really taste the tequila. However, after the cupcakes were frosted and decorated I could no longer detect the tequila - just a fresh lime taste.



I am a huge margarita fan! So of course I love a margarita cupcake!
