Peach Caprese Salad


This Peach Caprese Salad is super refreshing and the perfect appetizer to serve at your next barbecue.


Simply layer peach slices, mozzarella cheese slices and basil leaves.


To make the glaze simple heat up some balsamic vinegar about 1/2 cup in a small sauce pan with a few tablespoons of honey for about 10 minutes until the mixture thickens. Then simply drizzle it over the peaches.

I love the smell fresh peaches.

S'more Tart


We love s'mores! However, we are experiencing a thick marine layer, early morning drizzle and June gloom. So instead of making s'mores in the backyard fire pit I made an indoor s'more treat.


This tart is messy and gooy just like a fire pit s'more!

Ingredients:

crust:

3/4 cup confectioners sugar

1 1/2 cups flour

3/4 cup butter, softened

1/2 teaspoon vanilla

toppings:

1/2 cup graham cracker crumbs

5 regular sized Hershey bars

4 cups mini marshmallows

Directions:

Preheat oven to 350 degrees. Combine the crust ingredients in a medium bowl. Just mix with a wooden spoon until the dough starts to come together. Then press the dough into a tart pan and bake at 350 degrees for 10 minutes.


When the tart shell comes out of the oven - evenly sprinkle the graham cracker crumbs over the crust.



Start breaking the Hershey bars into little bars and start setting them on top of the graham cracker crumbs.


And finally add the mini marshmallows over the Hershey bars.


Put the tart back into the 350 degree oven for 5 to 7 minutes until the marshmallows are lightly browned.

Let cool to room temperature before slicing. This would be awesome drizzled with some melted chocolate or carmel sauce.

Red, White and Wow
