PB&J Granola

I can't stop making granola! Each time I make granola I tweek the recipe  just a little!

Today I made PB & J Granola! Yum!




Ingredients:

6 cups old-fashioned rolled oats
2 cups coconut
2 cups of peanuts
1/2 canola oil
1/2 packed brown sugar
1/2 cup maple syrup
1/2 cup honey
2 teaspoons ground cinnamon
1 teaspoon vanilla
2 cups dried cranberries or dried cherries
2 cups of peanut butter chips

Directions:

Preheat the oven to 325 degrees.

Mix the oats, coconut and peanuts in a large bowl. Set aside.



In a medium saucepan over low heat mix the oil, brown sugar, maple syrup, honey, cinnamon and vanilla. Mix until everything is smooth and completely blended. Pour over the oat mixture and mix until everything is combined.

Line a large shallow pan with foil and spread the mixture in the pan. I use an extra large glass pan so I don't need to use the foil.

Bake until the mixture is browned - 50 minutes. Stirring every 10 minutes. Cool in the pan. Once the granola is cool add the dried berries and peanut butter chips.


I bought the peanuts and dried cranberries from Trader Joe's.


You can buy the peanut butter chips at Target or the grocery store.



Mix the dried berries and peanut butter chips into the granola and place in a airtight container for up to 2 weeks. This recipe makes a ton - share it with your friends, neighbors and co-workers.
