Oreo Cheesecake


This cheesecake must chill in the refrigerator for 24 hours! You need to make it the day before you want to serve it!

Except for the whipped cream - make the whipped cream a few minutes before you are going to slice and serve.



Crust:

1 1/2 cups Oreo cookie crumbs (about 24 Oreo's) finely chopped

2 tablespoons melted butter

1/4 cup chocolate chips

Filing:

3 - 8 ounce packages of cream cheese at room temperature

3/4 cup sugar

5 large eggs

1/4 teaspoon salt

2 teaspoons vanilla

1/4 cup flour

8 ounces of sour cream

8 Oreo cookies, coarsely chopped

Topping

6 coarsely chopped Oreo cookies

1 cup heavy whipping cream

3 tablespoons sugar

1 teaspoon vanilla

Directions for the Crust:

Add the chocolate chips to melted butter. The warmth of the butter will melt the chocolate chips. Stir until the chocolate chips are completely melted. Then stir in the Oreo cookie crumbs. Press the mixture into the bottom of a 10" Springform pan. Set aside.

Directions for the Filling:

Place the room temperature cream cheese into the bowl of a stand mixer - beat on low speed until it is light and fluffily. Add the sugar and salt to the cream cheese mixture. Continue to beat on low.

Add the eggs, to the batter one at a time - making sure that each egg is completely beaten before adding the next egg,

Add the sour cream, vanilla extract and flour. Beat until the entire mixture is smooth.

Remove the bowl from the mixer and gently fold in the coarsely chopped Oreo cookies. Pour the batter into the Springform pan.


Directions for the Topping:

Sprinkle the top with more Oreo cookie pieces.



To Bake:

Preheat the oven to 325 degrees. Fill two 9" cake pans with water - fill them about 2/3 of the way up. Place the water filled cake pans on the bottom rack of the oven and the cheesecake on the top rack. The water filled pans will act as a "water bath."

Bake for 1 hour. Turn the oven off and prop the door open and let the cheesecake sit for another hour in the oven. Remove the cheesecake from the oven and let it sit on your counter for 20 to 30 minutes to completely cool. Then cover the pan with foil and refrigerate for 24 hours. Yes, if you want to serve this for dessert - you need to make it a day in advance.


Using a sharp knife - edge all the way around the pan. Then remove the spring ring. Place the cheesecake on a cake plate.

For Topping:

Serve with dollops of freshly whipped cream. Combine the heavy whipping cream, sugar and vanilla with your immersion blender. Decorate the cheesecake with the whipped cream. You could also add a layer or Oreo crumbs to the top layer of the cheesecake. However, I was out of Oreo's so I didn't add the crumb layer and it was perfectly fine. Cut very small pieces because this is a rich cheesecake.

Oreo Basketball Cookies


These are super easy to make! You just need some Double Stuff Oero's, lollipop sticks. melted orange chocolate and melted milk chocolate. I made these for my son Christian's basketball team - the boys loved them!


Lay the Oreo's out on parchment paper and dip the end of the lollipop into the melted orange chocolate and wiggle it gently into the Oreo frosting.


Dip the Oreo's into the melted Orange chocolate. Use a spoon to help completely coat the Oreo.


Once the orange chocolate is dry - take some melted milk chocolate and put it in a plastic bag. Twist the bag so that the chocolate is down at the bottom and snip off the end.  Then pipe the basketball lines!


I also made some without lollipop sticks.  These would be cute to make for your March Madness party!

White Chocolate Covered Oreo's with Crushed Candy Canes


I dipped regular Oero's into white chocolate and sprinkled them with crushed candy canes. Yum!


Okay -  after I dipped and sprinkled all of the Oero's - I still had a lot of melted white chocolate. So i decided to dip some pretzel rods.


I just dipped the top half of the pretzel in the white chocolate.



I packed the pretzels in pretzel bags and tied them with red ribbon.

Note: You can buy pre-crushed candy canes or make your own by putting unwrapped candy canes in a ziplock bag and crushing them with a heavy object!

Pumpkin Oreo's and Marshmallows

Today I made some pumpkin Oreo's and Marshmallows! A fun treat and easy treat to make. No baking involved.


Aren't these adorable? I just dipped the Oreo's in the orange candy melts that you can buy at Michael's or any party store.


While the orange tabs were melting.......


I found some black icing, green Tic Tac's and broke some pretzels.


Then I set out the Oreo's and marshmallows on parchment paper.


Once the Oreo's were dipped in the orange chocolate - I immediately added a green Tic Tac or broken pretzel for the stem.


When the orange candy coating has completely dried - add the face decorations with black icing.


On the marshmallow once the orange candy coating is dry - you can make the face decorations and tie a little green bow to add a little color.

If you want to put these treats into little plastic bags - they need to dry overnight. So that the icing faces don't get smudged.

Graduation Oreo's



I made some chocolate covered Graduation Oreos for Christian's class party today.  I bought the Graduation decorations, red and yellow chocolate at Michael's.


So I dipped some Oreos in yellow chocolate and added the Graduation Cap.


I dipped the remaining Oreos in red chocolate and added the Diplomas.


Then I put the Oreos on a big platter to bring to the party tomorrow.


After all of the parties and festivities for both of my graduates - high school and fifth grade - I will need a vacation. And by vacation - I mean a relaxing vacation.

Oreo's with Red Roses


Today I dipped some Oreo's in light blue chocolate. Then I added a little red frosting rose. I was trying to make my Oreo's look special for Memorial Day.


I had bought red frosting roses for a Valentine project - Opps! I forgot to use them for my Valentine cupcakes.


I love how these look! So look in your cupboard for items that you bought for previous holidays and see how you can use them for upcoming holidays.

Happy Face Oreo's


This week is Teacher Appreciation Week and today was "Bring a Smile to your Teacher." So I made some yellow chocolate covered Oreos and piped on a happy face with a black frosting pen.


Once I dipped the Oero in the yellow melted chocolate - I placed them on parchment paper to dry. I just used a simple black icing pen to pipe the happy face.


Don't these look cheerful?


I placed these on trays to dry overnight. I also bought some "Happy Face" bubble rings for the kids to wear. Opps! I forgot to take a photo of the rings.

The black frosting takes almost twenty four hours to completely dry.

Springtime Chocolate Covered Pretzels and Oreos


I had left over melted yellow chocolate from making my Chick Pops.  What to do? I made some Oero's and pretzel's.


Always lay your chocolate dipped items on parchment paper and wait for them to completely dry before packaging! I love how the rainbow sprinkles look with the yellow chocolate!


I packaged the pretzel sticks into little bags to use as party favors for Lisa's lunch and lunch box treats for my kids.


I think these came out really cute! I used a thicker pretzel stick.


They are called Old Fashioned Dipping Sticks - and because they are much thicker - seven or eight sticks work perfectly in the treat bag. I think I bought these pretzel sticks at Ralph's.


I decided to use the Oero's for after school snacks. Christian loves cookies and milk for his after school snack! And when his friends come over - they love also love a chocolate covered Oero!

More Chocolate Covered Oreos

Noelle made chocolate covered Oreos for her basketball team.



She dipped the Oeros in white chocolate and added the gingerbread men.


Once they were dry I packaged them in little bags and tied them with gingerbread man ribbon.

After the basketball game last night - Noelle passed these out to her teammates.

Chocolate Covered Oreo's

I dipped Oreo's in chocolate and decorated them with gingerbread men.



First lay your Oreo's out on parchment paper. Then melt your chocolate.




Now dip your Oero in the melted chocolate - tap off the excess chocolate.



Before the chocolate hardens - add your decoration. I thought these gingerbread men were so cute!



After the gingerbread men have hardened on the Oero. I used a toothpick to put a little melted chocolate on the hand of each gingerbread man and added a little candy cane.



Once everything was dry, I placed the cookie in a small bag and tied with a gingerbread man ribbon.

These would look really cute on a cookie platter or in a basket by the front door to give to anyone who pops by!

Run, run as fast as you can you can't catch me - I 'm the gingerbread man.........

Pink Oreo's

I dipped Oreo's  in white chocolate and then used hot pink sprinkles to decorate.


I made these to serve with the Pasta in the Jar. The pink theme really looks beautiful and makes such a statement in October.
