Fruit Skewers For After the Tennis Match

I made two trays of fruit skewers for after the tennis match on Thursday.

The trays were garnished with a few sprigs of mint.

Quick tip - if you don't have time to cut a pineapple, watermelon and cantaloupe into cubes buy the precut fruit in the produce section. I know it is more expensive but often the convenience is worth it!

Baseball Food For Opening Day

I made two types of croissant sandwiches - chicken salad and turkey with cheese. In the baseball bowl is an orzo salad (click on pasta salad under labels and scroll down to the recipe).

I also made fruit skewers and a fruit tart. These recipes are also under labels under fruit kabobs and fruit tarts.

In the baseball bucket at the end of the Opening Day buffet is filled with baggies of ruffles tied with ribbon.

And that is our Opening Day Food! Oh no! I forgot to show you the baseball cookies.

I made these using a sugar cookie recipe - frosted them with melted white chocolate and piped on the red laces - super easy! I make these cookies every year - if you click on the baseball label and scroll down - it will show you the cookies step by step.

I hope your team wins! We are rooting for the Angels! This also would be a great tailgate picnic!

Red, White and Blue Skewers

Today I made some fruit and marshmallow skewers for the baseball party. Then I realized that they were red, white and blue and would be perfect for a 4th of July celebration.

The trick is to put the marshmallows in the middle of skewer so that they have to eat the fruit to get to the marshmallows.

Use medium size strawberries and trim the tops so that they are easy to eat!

Use the largest blueberries that you can find.  Also used the medium size skewers.

Fruit Kabobs For the Basketball Party

Kabobs,I made two types of fruit kabobs for Christian's basketball party.

The above fruit kabobs were really popular with the kids. I used blueberries, mini marshmallows and strawberries. But if blueberries were not available - grapes would fit the bill in a pinch.

I also made standard fruit kabobs with strawberries, cantaloupe, watermelon, blueberries and pineapple. These are super simple to make. I made a bowl of watermelon balls.

Then I made a bowl of cantaloupe balls.

Once you start threading the fruit kabobs to put on a tray - it helps the tray look much prettier if the kabobs look almost the same.

I always start the kabobs with a large piece of fruit - like the pineapple chunk.

Food For The Tennis Match

Today we played a rain make-up match and for rain make-ups you don't need to provide lunch.  But the classy thing to do is to provide some light and tasty snacks.

I made an olive tray (I forgot to take a photo - sorry)

Then  I made mini fruit kabobs on little bamboo sticks. I bought the fruit spears in sticks at Trader Joe's and they are super easy to cut into mini cubes. I bought the little bamboo sticks at Party City and you can use them for all sorts of appetizers.

Then I put some chicken salad into little phyllo cups and garnished with mini springs of rosemary. I bought the phyllo cups in the frozen section at Henry's they are organic. The chicken salad is pre-made from Trader Joe's and the rosemary is from my garden.

Then I made mini lemon tarts garnished with a single blueberry and tiny mint leaf. I bought the shortbread tart shells at Ralph's and the lemon curd, blueberries and mint at Trader Joe's. I want to grow my own mint, it is expensive to buy and doesn't stay fresh for very long.

So those are the snacks I made for the tennis match - everyone loved them.
