Blueberry Pizza with Honeyed Goat Cheese


Today I made a blueberry pizza for lunch. Blueberries have been on sale this week! This pizza is super easy to put together and so delicious.

Ingredients:

1 naan flatbread

2 tablespoons honey

4 ounces goat cheese

handful of fresh blueberries

3 slices of prosciutto - cut into 1' pieces

1 teaspoon fresh thyme leaves

Directions:

Preheat oven to 425 degrees. Put naan on a baking sheet.

Combine the goat cheese and honey - to make a paste. Spread the honey/cheese mixture on to the naan.


Then sprinkle with the blueberries.


Bake in the preheated oven for 10 to 12 minutes.


When the pizza comes out of the oven sprinkle with the thyme and prosciutto. 


This pizza is sweet, savory and so delicious!

Caprese Mini Tarts


This is a delicious lunch or light dinner with a green salad. They would also be a wonderful after school snack.


Ingredients:

1 sheet of puff pastry (most boxes come with two sheets - save the other sheet)

1 tablespoon of olive oil

Salt and pepper, to taste

4 ounces of fresh mozzarella, cut into thin small slices

30 to 40 grape tomatoes, cut in half

3 tablespoons fresh basil, finely chopped

Directions:

Defrost one piece of puff pastry on your counter for 30 - 40 minutes. Once your puff pastry has been defrosted preheat oven to 375 degrees.

On a piece of parchment paper that is sprinkled with flour carefully unroll the piece of puff pastry.  Roll out the puff pastry until it is about 2" bigger all around.

Cut the piece of puff pastry into 4 pieces. Place the puff pastry squares on a parchment paper lined baking sheet.


Roll the edges up on the puff pastry and lightly brush with olive oil. Sprinkle with salt and pepper. The edges don't need to be perfect - we are going for a rustic look.


Place the cheese slices on the tarts.


After the cheese layer add the sliced cherry tomatoes.


Bake the tarts in the preheated 375 degree oven and bake for 15 minutes. The edges of the tart should be golden brown.


Once the tarts have been removed from the oven - sprinkle them with finely chopped basil.



Place your warm tarts on a serving platter.


This is the second time I have made these Caprese Tarts they so are simple to make.

Fresh Tomato, Basil and Mozzarella Pizza

In the summer we never have any food! I go to the grocery store and the next day I need to go to the store again! We have guests and everyone is home. I just want to shout - "You need to eat? Again?"




This is a super easy recipe that you can make for lunch or dinner. Make a double batch and hopefully you will have some leftovers!





Ingredients:

2 tablespoons extra virgin olive oil
1 fresh package of  pizza dough (I got mine at Trader Joe's)
16 oz. of fresh mozzarella cheese, thinly sliced
3 cups of red and yellow grape tomatoes, cut in half
2 cloves of minced garlic
2 tablespoons grated parmesan cheese
1/4 cup sniped fresh basil
freshly ground pepper



I bought these fantastic heirloom tomatoes at Trader Joe's.

Directions:

Preheat oven to 400 degrees. Brush the baking sheet with one tablespoon of olive oil.

Place the pizza dough on the prepared baking sheet. Stretch the pizza dough into a rectangle and fold over the edges a little. This doesn't need to be perfect. We are going for a rustic look. Brush the dough with the remaining olive oil. Prick the dough a with a fork every two inches. Bake the dough for about 10 minutes until it is just very lightly browned.

Take the pan out of the oven and add the cheese, tomatoes, garlic and parmesan cheese. Put the pizza back in the oven for about 7 - 8 minutes. The cheese should be nicely melted. Sprinkle with the basil and a little freshly ground pepper. Cut into squares and serve!



This is a perfect light lunch or can be served with a salad for dinner.
